Hi! How long will a sphere of amaretto (your coco almond fondant vid), your melon caviar and raspberry ravioles last before becoming completely gelled, or solid... whatever happens to them? I'm making a 4 course meal next week and want to know how long in advance I can prepare these. A quick reply would be greatly appreciated, thank you!! :)

How many grams is one packet of sodium alginate?

How long will the spheres hold for? Can I place them in a jar suspended in some liquid, say oil or syrup of some sort, for several days or will the film disintegrate? I have been wanting to use this technique in our restaurant for some time now but if we have to make them at the moment they are ordered, it will be hard to do. Love your videos, by the way.
