I'm always glad when people want to explore the cuisine of México, but what's shown here, with the exception of the queso Oaxaqueño, is Tex-Mex. Tex-Mex is a wonderful cuisine in its own right, but going to Veracruz, a state famous for its seafood, to talk about fajitas (whose birthplace is either Houston or San Antonio, depending on whom you believe) is like going to Maine to learn about barbeque.
