There are only a handful of knives I use in the kitchen.
A Japanese set of 6 knives and the Chinese Chefknife.
All forged by hand and kept razor sharp. You will never need more than those knives and
they will do almost every task perfectly and occasionally even outperform European knives
in their own cuisine. -

eh.... not that difficult to anyone familiar with A: a knife (nakiri or french) and B: anyone ever who has worked with a white round fish. cornstarch or tapioca flour is not a secret.....

Those big Chinese Cleavers I found is much more useful than those fancy European knife sets - it can cut, skin, chop, dice, carve, crush, fillet, scoop, anything ... I used to carry around a knife set numbering around 16. That one knife has pretty much replaced all of them. Keep it sharp and it will do you wonders.
